Discover Totto Ramen & Sushi Bar

Walking into Totto Ramen & Sushi Bar for the first time felt like stumbling upon a neighborhood secret that locals quietly protect. The space has that laid-back diner energy-casual tables, the comforting hum of conversation, and the unmistakable aroma of simmering broth that hits you before you even glance at the menu. Located at 3334 N Texas St A, Fairfield, CA 94533, United States, it’s easy to see why this spot shows up again and again in local reviews when people talk about dependable Japanese comfort food.

On one visit, I watched a regular walk in, nod at the staff, and order without opening the menu. That kind of confidence usually tells you everything. The ramen here follows a method that serious noodle fans respect: broth simmered for hours, not rushed, with bones and aromatics breaking down slowly to build depth. According to culinary research shared by the Japanese Culinary Academy, long-simmered broths extract collagen and amino acids that create both flavor and body, and you can taste that science at work in every spoonful. The tonkotsu is rich without feeling heavy, while the miso option brings a balanced, savory edge that doesn’t overpower the noodles.

The noodles themselves deserve attention. They arrive with just the right bite, suggesting controlled hydration and cooking times, a detail often missed in lesser kitchens. I once asked a staff member how they keep consistency during busy hours, and they explained their timed boiling process and small-batch prep, which mirrors best practices recommended by ramen experts like Ivan Orkin, a chef widely respected for bridging Japanese tradition with American kitchens.

Sushi holds its own alongside the ramen, which isn’t always the case at combo spots. Rolls are cleanly cut, rice is seasoned lightly, and fish tastes fresh, a point that matters when Fairfield diners compare locations. A simple salmon avocado roll shows restraint, while specialty rolls lean playful without going overboard. One plate that stood out featured crisp tempura shrimp paired with a soft drizzle of sauce, delivering contrast instead of chaos. That balance is something the Seafood Watch program often highlights when discussing quality seafood handling, and while this isn’t a white-tablecloth restaurant, the care is evident.

What makes the experience feel trustworthy is transparency. The menu is clear, portions are consistent, and prices stay reasonable for the area. You’re not paying for trends; you’re paying for execution. Reviews often mention friendly service, and from my own experience, staff are quick to explain dishes without sounding rehearsed. When I asked about spice levels, I got a practical answer, not a sales pitch, which builds confidence for first-timers.

There are limitations worth noting. Seating can feel tight during peak dinner hours, and if you’re craving an extensive sashimi list, this may not be your destination. Still, those gaps are easy to forgive when the core offerings are done right. For families, solo diners, or anyone looking to unwind with a warm bowl and a cold drink, this place fits naturally into a weeknight routine.

It’s easy to understand why people describe this spot as authentic comfort, reliable flavors, and local favorite. Those phrases show up repeatedly in conversations and reviews because the experience backs them up. Whether you’re stopping by after work or making a casual dinner plan, the combination of ramen, sushi, and a relaxed atmosphere makes this Fairfield diner feel both familiar and worth revisiting.

  • Had the tonkotsu ramen. It had good, above-average broth (IMO the most important part) relative to your typical ramen place. The biggest issue was probably that it was really corn-heavy. Also not as filling as other places I've been. But the flavor was still good either way. The prices were also reasonable for ramen (base ramen prices were all around $16.50-$17). Most of all, the staff were all very friendly and attentive.

  • Lunch special. Black garlic ramen. Karaage chicken with rice. That broth is on point one of the best broths I’ve ever had. Loved the noodles had a nice snap to them & wasn’t soggy. All the ingredients complimented eachother. The pork was very tender. The garlic cloves weren’t over powering. Would definitely recommend & will be coming back again & again till all ramen has been tried. They packaged it well so don’t worry about anything spilling which was a concern of mine but they got it all covered!

  • Totto Ramen ~ Unassuming location but superior in every way. Close to I-80. Parking is easy. Seating accommodates maybe ten tables. Staff are friendly and hustle to get your food. Take out / to go orders also fly out the door. APPETIZERS: Tempura combination was delicious. We eyeballed the neighboring table’s Napa Sushi Roll and ordered one for ourselves. Yum. RAMEN: Black Garlic Ramen is delicious. Be sure to order some spice on the side. Of course, we will return for the ramen and also for the Lion King (Baked) Sushi Roll because we eyeballed that too on the neighboring table! Next time!

  • They were open on a holiday so we were able to stop to try their menu. Friendly staff, clean, fast service. Their spider roll was on the salty side, but a generous portion. We ordered garlic ramen and also chicken karaage. The kids enjoyed the ramen very much.
